Roasted sweet potatoes, peppers and onion egg white fajitas topped with heirloom grape tomatoes and scallions and a splash of olive oil, to drink water and dessert in a little, rather full now

OMG these fajitas were soooo good !, and you know this girl 🙋‍♀️ loves to eat her rainbow 🌈
If you are short on time, do this (I will use this method in the future if you press me over time)
Cut sweet potatoes into small chunks, cut peppers and onions into a covered aluminum foil pan sprinkled with Pam, season with sea salt, pepper and garlic, add a splash of olive oil and cook in 425 preheated oven for 20 minutes. cooked to perfection.
