Lazy dinners are the best … especially when I'm the only one who eats it – I can make it as "healthy" as I want!

This is just some organic tofu pan fried in 1 tbsp coconut oil, 1 tbsp maple syrup and 2 tbsp coconut amino (or you could use tamari). Add all the vegetables you want (I used carrot, zucchini, spinach and broccoli, along with some fresh coriander), toss it around so it is all hot and then serve the zucchini noodles. Easy, delicious and torn approved 👯‍♀️
