If you LOVE # pizza but are trying to be healthy, there are plenty of options for regular pizza crusts. Cauliflower pizza crust is popular, but what about our #EggplantPizza?
Here's the recipe: Preheat oven to 450 ° F. Cut 1 eggplant into 1/4 inch slices. Cut 1 medium tomato in half and cut to 1/4 inch thick. Cut 3 olives. Cut 3 Ciliegine mozzarella into quarters.
Place the tomato slices on each eggplant slice and season with salt to taste. Add olive slices, mozzarella pieces and pepperoni slices (2 ounces total). Sprinkle with olive oil (1/2 tbsp total) and season with freshly ground black pepper. Bake in preheated oven for 5-8 minutes.
You can also use your favorite pizza toppings such as onions, mushrooms, ham, etc.!
